In order to retain the beneficial properties that tallow has to offer, we use the traditional dry render method (low and slow heat + beef fat) as opposed to the typical wet render method (heat + water + salt). Wet rendering makes tallow less shelf-stable since this process uses water increasing the chance of mold, bacteria, and oxidation. The wet render method also changes the nutirents/fatty acid profile which means you're losing much of those amazing properties animal fat offers, and possibly even more depending on how many times it has been refined a.k.a "purified" (reheated water and salt, normally done 2-3 times or more to achieve a white, odorless product).
 
Grass-finished also matters because it effects the quality of the fat and nutrient profile. All cows eat grass but what their lasts few months diet is impacts quality and grain-finished is cheaper and faster on the pocket. Grass-fed does not equal Grass-finished.
