Interested in the sweet and nutty flavors that einkorn has to offer? Try our whole grain einkorn sourdough starter! It's well established (strong and bubbly with quick rising) so no need to wait on using it in recipes. Even if you don't use einkorn in your kitchen, you can maintain an einkorn starter to use in sourdough recipes and still impact flavor! It'll be subtle yet nutty with some of the added benefits from einkorn. To keep it einkorn, you can continue feeding it with einkorn flour or switch to any flour of your choice and use the starter the same exact way in any sourdough recipe you'd like!
You'll receive 1-2 tbsp of stiff starter that can easily be refreshed and continue in Carla Bartaloucci's method, left in the fridge until you're ready to get to it, or converted to a wet starter (as typical with most sourdough recipes) which call for 100% hydration. Coverting to a wet starter would be the same as feeding: add your starter to a glass jar and add in by weight 1:1 water and flour. For example, add in 100grams of water and 100grams of flour (don't bother weighing the starter at this time), or do a huge feed like 1000g each if you plan on making a lot with it. Consider that it will take the starter longer to eat through the flour and grow with big feeds, so maybe feed the night before.
